I don’t bake very often, nowadays.
In all my previous homes, I baked cakes, scones, biscuits and bread at least once a week….
But now my children have families of their own and, sadly, I live too far away for the grandchildren to pop round for cookies and gingerbread men.
But, occasionally, I decide to bake a treat …..maybe for visitors or as a special request from OH……so today I made this chocolate cake.
I often use the ‘One bowl method’ for every-day cakes. I find this gives a lovely moist texture and is quick and easy …..without too much washing up !
And when I want to be sure that the result of my labours will turn out well and be absolutely delicious, I use the fail-safe recipes in one of my favourite cookery books ……
‘THE COMPLETE INTERNATIONAL JEWISH COOKBOOK’ by EVELYN ROSE
I have had my copy since 1976 and it has been well-used ….so please excuse the rather stained pages.
This is a wonderful book ……. full of lovely, homely recipes ….. so, if you ever see it in a charity shop or secondhand book-shop ….I urge you to buy it. The recipes have never failed and the Luscious Lemon Cake and Dutch Apple Cake are the best I have ever tasted ! ………….. now you HAVE to find it …….I’m such a tease !
I’m not a particular fan of chocolate, but do like a dark, (80% or 90% cocoa) chocolate, so I always use a dark chocolate ganache for the filling and topping…..but you can decorate however you wish.
And …..voila ! ……….

I also have a fail safe chocolate cake recipe, no eggs, vinegar instead. Delicious every time. The key, don’t stir to much and it works fabulously. Yours definitely looks delicious!
