I am visiting my daughter and two of my grand-children, in St. Helens, for a couple of days.
And, as a tea-time treat, my grand-daughter Lillian, [ age 14 ] has made these fabulous chocolate chunk, cookies !
They are absolutely delicious and Lillian has allowed me to give you all the recipe. ……… so here you go ……
[ Makes 15 ]
300g Caster Sugar
1 Egg ( beaten )
325g Self-raising Flour
400g of Chocolate …. not cooking chocolate
Dash of milk……. if needed
Set oven at 180 degrees. Line 2 large baking trays with non-stick, baking paper.
Whisk the sugar and butter together and then slowly add the beaten egg.
Add the flour gradually and mix until it begins to form a ball.
If it is too crumbly, add a tiny amount of milk ( a teasp at a time)
Break up the chocolate into chunks and evenly spread through the mixture.
Divide into balls, roll then flatten a little.
Place the shapes, well spaced, onto the baking trays.
Bake for 10 mins. Let cool for 30 mins.
